Baked Sweet Potato Fries

If you are unable to eat potatoes, sweet potatoes are a perfect option.  “Hannah” sweet potatoes are white and not nearly as sweet as their orange or red counterpart. Hannah sweet potatoes are the variety I like to use in soups and stews.

 

Ingredients:

Olive Oil
2-3 sweet potatoes
Salt and Pepper

 

Directions:
Preheat oven to 425 degrees.

Peel and slice sweet potatoes into 1/4 inch long slices, then cut again into 1/4 inch strips.

Place sweet potatoes in a bowl and toss with oil and seasoning.

Spread potatoes in a single layer on a baking sheet.

Don’t overcrowd your fries.

Bake for 20 minutes, till golden brown and tender. Turn once during cooking time.

Let cool slightly before serving.

Note: I also like to peel these and just use my mandolin slicer, to leave the potatoes in large strips. The mandolin cuts everything evenly, so they cook evenly as well

My favorite seasoning for fries is Herbamare , instead of a traditional salt and pepper.
