Chocolate Coconut Quinoa Crisp Cups

If you are looking for a creative and delicious way to incorporate more coconut oil into your diet, this healthy candy recipe is for you.

 

Chocolate Base Ingredients:

3/4 C. Coconut Butter

3 T. Coconut Oil

2 T. Powdered Lakanto

1 T. Cacao Powder

1/2 C.  Quinoa Krispies

 

Coconut Layer Ingredients:

3/4 C. Coconut Butter

1 T. Coconut Oil

1-1/2 tsp. Vanilla Extract

2 T. Powdered Lakanto

 

Directions:

1. Place 8 paper liners in large muffin tin and set aside.

2. Place coconut oil and coconut butter in a pan. Place pan in a secondary bowl of warm water to melt, or place bowl in dehydrator to melt. Remove from warm water /dehydrator. Stir in powdered lakanto and cacao till well blended. Add quinoa and stir till well coated.

3. Divide chocolate mixture into the 8 liners. Set aside.

4. Place coconut oil and coconut butter in a pan. Place pan in a secondary bowl of warm water to melt, or place bowl in dehydrator to melt. Remove from warm water /dehydrator. Stir in lakanto and vanilla.

5. Divide this mixture amongst the 8 muffin liners.  Place muffin pans in freezer to set.

6. When solid, remove from freezer and store in refrigerator.

7. Remove from fridge 20-30 minutes before you serve.
