This soup combines the wonderful benefits of fiber and protein from the lentils, as well as a high vitamin K content from the Swiss chard. This soup is also loaded with alkalizing vitamins and minerals that nourish your body.
2 Tbsp. olive oil
1 leek sliced
1 zucchini, chopped
3 cloves garlic, minced
2 stalks celery
4 cups vegetable broth
2 cups Eden Organic adzuki beans
1 bunch red chard, stems removed and leaves chopped
1. Heat oil in a saucepan over medium heat.
2. Add leeks, celery, zucchini and garlic. Sauté until leek is tender.
3. Add broth, lentils, and chard. Cook for 10 minutes till chard is wilted.
