Spinach & Mushroom Quesadillas

spinach & mushroom quesadillas

Gluten free tortillas filled with  goat cheese, spinach and your favorite mushrooms. This dish can be enjoyed as a main course , or as a side dish with a bowl of fruit or soup.

 

Ingredients:

1 large handful of baby spinach

5 medium mushrooms, cleaned and sliced

1/4 cups shredded goat cheddar cheese

2 Gluten Free tortillas

 

Directions:
Heat oil in a skillet and cook mushrooms over medium heat until caramelized. Add spinach on top and cook just until wilted.
Using a 12″ skillet place one tortilla in the pan over medium high heat.
Layer tortilla with cheese, then add spinach and mushroom mixture on tortilla. Top with second tortilla.
Place a sandwich press on top to prevent tortilla from curling. Cook until cheese starts to melt, turn when bottom of tortilla is slightly browned.
Cook until lightly browned on both sides.
Cut into wedges and serve as an appetizer, or serve as a side dish with a bowl of delicious soup.
Serve with toppings of your choice.

Love this cast iron press for quesadillas. Would work great for any grilled sandwich.
