Kale, White Bean and Sausage Soup

Kale, White Bean & Sausage soup is comforting and mineral rich. This soup is made in minutes and delicious on a cold or rainy day. Customize this soup with your favorite greens or sausuage  and it will still taste delicious.



2 T.  Extra Virgin Olive Oil

1/2  C.  onion,  chopped

1/4  C.  leek, chopped

2 Applegate Organics-Sweet Italian Sausage, chopped  (this is made with turkey & chicken meat)

1/2  C. carrot, chopped

1/4  C.  celery, chopped

6  C. filtered water

1  bunch kale, rinsed, chopped

2  strips kelp, dried, chopped

1  15 oz. can Eden Organic Cannellini beans (rinsed and drained)

Herbamare (to taste)



1. In  large saucepan, add 2 Tbsp. extra virgin olive oil and saute onions, leeks, sausage, carrots and celery.

2. When  onion is translucent, add water, beans kale and kelp. Bring water to a boil, then lower temperature and allow soup to simmer at least 2-3 hours. The longer this can simmer, the better the flavor.

I found that I needed very little seasoning due to the salt in the kelp and the flavor of the sausage.
