This winter squash is known by names such as sweet potato squash or bohemian squash. Delicata squash has a rich yellow flesh, that is so sweet on its own, it needs no sweeteners.
Ingredients:
1 Delicata Squash
1/4 cup extra virgin olive oil
1/4 cup chopped parsley
1 large clove garlic, minced
Directions:
Peel the squash.
Cut off the ends.
Cut squash in half lengthwise.
Cut into 1/4 inch slices
Put all ingredients in an 8 x8 baking dish and toss till well mixed.
Bake at 375 for 30 minutes or till tender.
