These nutrient dense superfood bars are ready in under an hour. No baking, no dehydrator, just a food processor or mixer.
Base Ingredients:
1 C. packed, medjool dates, pitted
1/4 C. honey
1/4 C. almond butter
Dry Ingredients:
1/4 C. almonds, chopped
1/4 C. pumpkin seeds
1/4 C. hemp seeds
1/4 C. sunflower seeds
1/4 C. shredded coconut
1/4 C. cacao nibs
Directions:
Process dates in food processor till smooth and creamy. Add in honey and almond butter, mix till well combined, you will have to stop and scrape down sides.
Add in dry ingredients. Process till blended. I left mine a little chunky as I prefer the texture.
Line an 8” x 8” pan with parchment paper. Put mixture in pan and with wet hands (dip your fingertips in water, so mixture won’t stick) press mixture firmly and evenly into pan.
Place in freezer for 30 minutes or so to set.
Remove from freezer. Lift parchment paper out of pan and cut bars into desired size.
Store these nutrient rich bars in the fridge. I enjoy these as a dessert or a snack.
