Dark Chocolate, Protein Rich, Gluten Free Brownies

I love desserts, but  prefer things that are not overly sweet. I also have an obsession with chocolate, so this recipe is a great option. I also have kept it simple. You can easily adapt this recipe by adding nuts, cacao nibs, or fresh fruit toppings.

 

About the more unusual ingredients:

Lakanto the zero calorie sugar

This recipe  uses Lakanto in place of sugar. Lakanto is made from Non-GMO erythritol and the super sweet extract of the luo han guo fruit, also known as monkfruit. Unlike sugar and the other sweeteners, Lakanto does not feed the harmful yeast (candida) and bacteria in your body. Lakanto is also safe for diabetics.

There are two varieties of Lakanto available Golden and Classic.  Golden Lakanto has a flavor similar to brown sugar or molasses. Classic Lakanto has a flavor similar to table sugar. Lakanto is available online and in health food stores.

 

Jing City

This is one of my favorite herbal blends, it contains, Dandy Blend(roasted barley, rye, chicory root, dandelion root, and beet root), Organic Lucuma, He Shou Wu, Morinda, Cistanche, Eucommia, Rehmannia, Cordyceps, Shilajit, and Himalayan Crystal Salt.

 

The Recipe

Ingredients:

2 C. organic black beans, cooked, rinsed, drained  (OR a 15.5 oz can organic black beans, rinsed, draained)

2 eggs

1/4 C. organic sunflower oil

2 tsp. vanilla extract

1 tsp. Jing City powder

3/4 C. cacao powder

1/2 C. Lakanto

1/4 tsp. salt

1/2 tsp. baking soda

 

Directions:

Preheat oven to 325.

Line a square 8 X 8 baking pan with  parchment paper.  Grease paper with vegetable shortening or coconut oil. Set aside.

Place beans, eggs, oil and vanilla in food processor. Process until smooth.

Add remaining ingredients and process till all ingredients are incorporated.

Scrape/ pour mixture into pan and spread evenly in pan (mixture will be thick).

Bake at 325 for 25 minutes or till toothpick inserted in center comes out clean.

Remove from oven and place pan on cookie sheet and allow to cool.

Remove from pan, cut into squares and enjoy.

This is great plain or you can top with fresh fruit, or enjoy  with your favorite ice cream.
