Gluten Free Blackberry Oatmeal Bake

My son sent me pictures of a fabulous dish he made. It was from a recipe he found online at Fit Men Cook, it was called a Berry Bake. While it looked delicious, it was too large a dish for me and I didn’t have all of the ingredients on hand. I decided to cut the recipe in half, delete a couple of things I didn’t have on hand and add a few things I did. The results were quite good. So here’s the smaller, modified version I  created.

Ingredients:

1-1/2 C . Frozen blackberries

Wet Ingredients:

1 Eggs

1 Cups Almond Milk

1-1/2 tsp. Vanilla Extract

Dry Ingredients:

1 C. GF Oats (uncooked)

1/4 C. Pecans (chopped)

1/4 C. Hempseed

1/4 C. Cacao Nibs

1-1/2 Tbsp. Lakanto Sweetener

1 tsp. Cinnamon

1/4 tsp. Sea Salt

1/2 tsp. Baking Powder

 

Directions:

Preheat oven to 400

In a bowl mix all of the dry ingredients and set aside.

In a second bowl mix all of the wet ingredients and set aside.

Grease the bottom and sides of an 8 X 8 baking pan.

Sprinkle half of the berries on the bottom of the pan.

Pour the dry mixture over the berries. Using a spatula or your fingers flatten and spread the mixture evenly over the berries.

Pour the wet ingredients evenly on top of the dry ingredients. Gently tap the sides of the baking dish to ensure everything is covered

Add the remaining frozen berries on top of wet mixture.

Place the pan in a preheated oven. Bake in the oven for 30 minutes or until you test it with a toothpick and it comes out clean. The edges and top of the bake should be golden brown.

Allow to cool before slicing. Garnish with yogurt and fruit if desired.
