Lucuma & Cinnamon Overnight Oats with Mango Chia Pudding

Break your regular  overnight oatmeal routine with this delicious recipe. It is gluten free, dairy free and sugar free. Enjoy this dish for breakfast or as a mid-day snack. It is very versatile as you can top this with your favorite fruits or nuts and is surprisingly filling.

 

Oats:

¼ C. GF Oats

¼ C. Almond Milk

¼ C. Coyo Yogurt

1/8  tsp.  Cinnamon

 ¼  tsp. Lucuma

1 ½ tsp. Lakanto Sweetener

Blend all ingredients except oats in blender till smooth. Pour into bowl, stir in oats, cover and refrigerate overnight.

 

Mango Pudding:

1.5 T. Chia seeds

½ Mango

½ C.  Almond milk

Puree mango and milk in blender. Pour into bowl and mix in chia seeds. Cover and refrigerate overnight.

 

Preparation:

Place mango pudding in parfait dish, glass or bowl.  Add chopped almonds. Place oatmeal mixture on top of pudding. Add your favorite toppings. I used almonds, hempseeds, shredded coconut and pumpkin seeds.
