Lucuma & Cinnamon Overnight Oats with Cacao Chia Pudding

This delicious, gluten free dish is great for breakfast or as a mid-day snack. It is very versatile as you can top this with your favorite fruits or nuts and is surprisingly filling.

 

Oats:

¼ C. GF Oats

¼ C. Almond Milk

¼ C. Coyo Yogurt

¼ tsp. Cinnamon

¼ tsp. Lucuma

2 tsp. Lakanto Sweetener

Mix all ingredients in bowl, cover and refrigerate overnight

 

Cacao Pudding:

1.5 T. Chia seeds

1 T. Cacao powder

½ C.  Almond milk

2 Tbsp. Lakanto sweetener

Mix in bowl, cover and refrigerate overnight.

 

Preparation:

Place cacao pudding in parfait dish, glass or bowl.  Add chopped almonds. Place oatmeal mixture on top of pudding. Add your favorite toppings. I used almonds, hempseeds, shredded coconut and cacao nibs.
