Bean Soup In A Jar

This is a simple and quick recipe that also makes a wonderful gift. The recipient only needs to add water, broth, onions, and garlic.
Packaging Directions
Buy 12-13 varieties of organic dried beans. If making this as a gift, mix beans together and package in one pint jars. You can mix in the dried herbs with the beans, or put the dried herbs in a small foil packet, that you place on top of the beans in the jar. Include the directions below with the jar. You can decorate the jar by adding a decorative square of fabric on top and then tying it off with raffia ribbon. If making for yourself, simply mix together and store in large 2 quart jars in your pantry.

Ingredients to make soup:
2 cups beans
2 quarts water
28 ounces broth
1 large chopped onion
1 clove garlic
½ tsp. each of thyme, basil, and summer savory
Salt and pepper to taste

Directions:
1. Rinse 2 cups of bean mixture. Place in a bowl and cover with water. Let soak for 4-6 hours.

2. Drain beans, place in large pan with 2 quarts of fresh water.

3. Add onion, minced garlic, 28 ounces of chicken or vegetable broth and herbs.

4. Boil slowly for 2 ½-3 hours.
