I love the simplicity of a breakfast parfait…but in truth you can enjoy this as a snack or even a dessert. While many people may be afraid of the title of this meal, rest assured, you can NOT even taste the spinach. The addition of coconut manna, gives the fruit the same wonderful thick consistency of a mousse.
Mousse Ingredients:
1-1/2 Mango
2 C. Spinach, packed
1/4 C. Coconut Manna
Additional add-ins:
Granola
Pomegranate seeds
Directions:
Place all ingredients in your vitamix or other high speed blender. Process till smooth and creamy.
Choose a parfait glass, or even a mason jar.
Alternate layers of granola, mousse and pomegranates.
Get ready for a delicious, yummy in the tummy treat.
