Cauliflower Crunch

This raw cauliflower crunch is a great snack for anytime of day. Low in calories, high in fiber and flavor. Give it a try.

2 heads of cauliflower (sectioned into small florets)
1/4 tsp salt
2 Tbsp. organic olive oil
Nutritional Yeast


1. Place the florets in a large bowl and sprinkle on the salt and toss lightly with your hands.

2. Drizzle the olive oil over the top and again toss with hands.

3. Sprinkle a heavy dose of nutritional yeast over the top, toss with hands….add another layer of yeast, toss with large spoons or hands. Do this about 4x. You will use more yeast than you would expect.

4. Layer the cauliflower out on the mesh dehydrator screens and dehydrate at 105 degrees for approx. 12 – 16 hrs.

Be sure to taste test as you dehydrate to get the desired texture you want. Different altitudes and humidity levels will yield different dehydrating times.

Store in  air tight container in pantry.
