I recently saw a video recipe on Buzzfeed.com for edible cookie dough, but the proportions seemed off….such as suggesting 2 Tablespoons of vanilla, which would really overpower the flavor profile. So I decided to make some changes to the recipe. I also chose to divide the recipe into thirds to create 3 separate varieties of cookie dough. You may note that these recipes are not very sweet, so feel free to increase the sweetness to your taste.
Ingredients:
1 C. Chickpeas, canned (also know as Garbanzo beans)
1/4 C. Cashew Butter
1 Tbsp. Lakanto sweetener
1-1/2 tsp. Vanilla extract
1/4 C. Chickpea liquid
Directions:
Open can and drain the liquid from the beans.
Rinse beans , place them on a towel and gently rub them to remove their skins.
Place the beans, nut butter, Lakanto, vanilla and chickpea liquid in food processor and blend till smooth.
Remove dough from processor and divide into three bowls. At this point we’ll create three different varieties of cookie dough.
Chocolate Chip Cookie Dough
Add 3 Tbsp. chocolate chips and 3 Tbsp. chopped walnuts. Mix well and enjoy.
Cranberry, Oatmeal, Walnut Cookie Dough
Add 3 Tbsp. GF oats, 1 Tbsp. chopped walnuts and 1 Tbsp. dried cranberries. Mix well and enjoy.
Chocolate, Chocolate Chip Cookie Dough
Add 1 Tbsp. cacao powder, 1 Tbsp. chopped walnuts, 2 Tbsp. GF oats, 2 Tbsp. chocolate chips. Mix well and enjoy.
